Not sure I would be brave enough to tackle a white amaryllis! I do have 2 growing and should sketch and paint them as they progress (one is just a leaf so far).
Forgot to say I like the red ones!!
White flowers are a challenge in watercolor for sure. Maybe worth trying in gouache?
